serving.

9. When corking champagne, do not allow a champagne
cork to pop. When opening the bottle, cut off the
foil, hold the cork tight and slowly turn the bottle
until cork loosens, hold it away from the customer
and let it slowly twist out to release the pressure.

10. Just as with any other profession, always carry
the tools of your trade, a bartender should always
have such things as a pen or pencil, cigarette lighter,
matches, wine opener, knife, and a cigar cutter.
Poor-quality products are counter productive. Always
use good-quality products.
11. Try extracting juice from citrus fruit by soaking
in hot water, before squeezing. You get better result.
12. Always break an egg in a separate glass before
using to test its freshness.
13. Often busy bars use pre-mixes, such as Bloody
Mary mix, sour mix, lemon juice, egg white and gomme
syrup.
